Soutzoukakia

Description

For the Souzoukakia

  • First chop half an onion into large cubes and add this to the bowl containing our prepared minced meat.
  • Then take the yellow to light green side of the leek, cut it into slices and add this too.
  • Finely chop the parsley and garlic.
  • Then add about 100g of breadcrumbs to the bowl.
  • To achieve the perfect taste, we use Kyriakos all-rounder for meat.

    This gives the meat a very special Mediterranean flavor.

  • We also add a teaspoon of baking powder and mustard.

    The meat is seasoned with salt, oregano, cumin and chili flakes.

  • Break three eggs into the bowl.
  • To finish it off, add a generous dash of golden olive oil and 2cl of ouzo.
  • Now start mixing everything well with your hands.
  • When we have finished mixing, we always take some of the mixture and roll/form it into a roll in our hands.
  • Add the souzoukakia to the preheated pan with the rapeseed oil and fry briefly on each side.

    When they are nicely browned on the outside, take them out and place the rolls on a plate.

    For the salsa

    • grate the tomatoes with a grater in a bowl and set aside for the time being.
    • Add a dash of olive oil to the same pan.
    • Then chop the other half of the onion and thinly slice it.
    • Dice half an orange and half a red bell pepper, slice the rest of the leek and fry everything in the pan.

      Add a clove of chopped garlic.

    • When everything is nicely browned, add the grated tomatoes to the pan.
    • In a bowl, mix a teaspoon of tomato purée with about 150ml of Greek Imiglikos red wine, a teaspoon of mustard, pepper, chilli flakes, stir and add to the pan with 50ml of water.
    • While the sauce is simmering, add a little salt, caraway seeds and cane sugar.

      Then chop the remaining parsley and rosemary.

    • Then add the souzoukakia to the salsa and cook through.
    • Finally, serve the meatballs with the salsa and sprinkle with fresh thyme.
    • Now our souzoukakia are ready and we can finally eat.
